Why protein waffles are more difficult than you think
Protein in waffle batter is more than just nutritional value. It actively affects the behaviour of the entire mixture. When used in excessive amounts without properly balancing the rest of the recipe, the result is predictable: a dense, dry bake lacking the lightness customers expect from a great waffle.
